Emergency baking: A literal cupcake

So I was kind of having a weird funk kind of day and I was planning on making cream puffs today, but my cousin said she is coming over tomorrow and she would like to help. 

Well I just got out of the shower and wanted something ooey gooey, warm and chocolately. Then I remembered reading about microwaveable cakes, likes the ones you can buy at the store but the home version. I found a recipe and in 5 mins I had cake.

Oh to make this even more sinful, when you finish microwaving it open up the cake with a form and slip some chocolate chips in, the cake is still really hot so it melts it and it is fabulous!

They turned out really yummy. The could be a little sweeter, I recommend not using the instant coffee, it kind of gave it a burnt taste. Still, it was really moist and the frosting was heavenly. I also accidentally used unsweetened baker’s chocolate, mistake. But they turned out super pretty!

Lessons learned:

- Wait till the cupcakes/cakes are completely cooled before decorating them, be patient.

- Unsweetened chocolate doesn’t make the best garnish

- I need a better hand mixer

Black Forest Cupcake

Today I am making black forest cupcake for my friend Kyle’s Birthday, his fiancee, Rosely (who I am made of honor for) is coming over to help me make it. The reason I am doing black forest cupcake is that he and I love the Portal games and the reward is a black forest cake (the cake is a lie). The reason for cupcakes is that we’re going to Big Al’s tonight and I didn’t want to fuse around with plates, forks and knives. 

The recipe I am using is from Annie’s Eats blog with a few changes and I am omitting the filling cause it sounds messy.

I’m also making a double batch. Lots of cupcakes :)

Ingredients:
For the cake:
3 1/3 cups all-purpose flour
1 1/3 cup unsweetened cocoa powder, sifted
3 tsp. baking soda
2 tsp. salt
2 tsp instant coffee
16 tbsp. unsalted butter, at room temperature
3 cups sugar
4 large eggs
2 tsp. vanilla extract
3 cups buttermilk

For the frosting:
2 1/2 cups heavy cream
12 tbsp. sifted confectioners’ sugar
2 tsp. vanilla extract

For garnish:
Fresh (or maraschino) cherries, with stems
2 tbsp. sugar
Chocolate shavings
